Holt students create recipe for healthy living

Holt High School students in Charlotte Gray’s Culinary Arts class are creating some new recipes as part of a nation-wide competition. The Let’s Move! Campaign in association with the U.S. Department of Agriculture (USDA) is challenging school nutrition professionals, chefs, and students to create tasty and healthy new recipes for school lunch menus across the country.
Let’s Move! was started by First Lady Michelle Obama, with the ambitious national goal of solving the challenge of childhood obesity within a generation. Local chef Lauren McCabe is volunteering her time to help the Holt students with their culinary creations. Operation Food Search was instrumental in sending chef McCabe to Washington, D.C. for the national launch, of Let’s Move!
“It was really motivating, so I want to do what I can to help improve the quality of food in our public schools,” said chef McCabe. “We need to combat childhood obesity and empower kids to make healthy choices now and in the future.”
Participants form teams and then develop, document, and prepare at least one healthy recipe in one of three different categories: whole grains, dark green and orange vegetables or dry beans and peas. Their final creations will be served in the Holt cafeteria and rated by a panel of fellow students.
Senior Tim Younger, who was busy working on his own bean recipe, said “It’s a fun opportunity, and it’s good for students to have some input in the school cafeteria menu!”
The top three teams will compete in a national cook-off to determine the grand prize winner. Winning teams will also be invited to prepare their nutrition-packed meals alongside White House chefs.
