Is it OK to eat the purple ones?

It would seem that green beans, by definition, are green. Well, not always.
At the Wright City Farmer’s Market, I purchased some purple green beans. The grower told me the beans would turn green when cooked. I figured they would be a great accompaniment to that evening’s Sloppy Joe supper.
The veggie novelties were washed and their ends snipped. In a saucepan, I boiled some water, plunged the beans in for about five minutes then drained them.
The previously purple beans turned bright green. Watching the colors transform was a bit of cooking fun--like nature’s Jiffy Pop. A smidge of butter and dashes of salt and pepper finished preparation.
The beans were delicious as well as a good time, tasting slightly sweet. The $2 quart-sized bag fed our dinner for five.
If you are looking for a fun seasonal treat, try some colorful “green” beans.
The Wright City Farmer’s Market is open on Thursdays from 3:30 p.m. to 6:30 p.m. from June through October at Diekroeger Park.
