Need an inexpensive, tasty meal that serves four? Your family will love this menu.
All ingredients found at Aldi.
Precooked ham steak—about $2.69/pound
Carrots—about one pound (about $1)
Cornbread mix—two boxes (about 30 cents each)
You’ll also need:
2 tablespoons butter for carrots
2 tablespoons brown sugar for carrots
2 eggs for cornbread mix
2/3 cup milk for cornbread mix
Prepare the two boxes of cornbread (use a 9x13 pan) and bake as directed.
Put ham steak in a pan, with sides, in the oven for the last 15 minutes of the cornbread’s baking time, until the ham is heated thoroughly.
Use a bag of baby carrots or peel and chop regular ones. Place carrots in a microwave-safe bowl with some water and microwave for 15 minutes. Drain off water, add a couple tablespoons of butter and a couple tablespoons of brown sugar, stir. This will melt and create a caramel sauce.
Also:
Use some of the caramel sauce from the carrots to drizzle over ham.
If you happen to have some lettuce in the fridge, offer a small salad.
Wrap up the extra cornbread and have it for breakfast or snack the next day.
