Fried green tomatoes; summer tradition

How are the tomatoes coming along? If they are green, now’s the time to pick some for this delicious recipe!

Fried Green Tomatoes

Ingredients:

3 green tomatoes (unripe)
½ cup flour
Splash of milk (about ¼ cup)
2 eggs, beaten
2/3 cup cornmeal
¼ cup olive oil
Salt and pepper
½ teaspoon cayenne pepper

Directions:

Wash tomatoes and cut into ½” slices. Place slices on paper towels.

Salt the slices. Wait about 10 minutes.

Mix milk and eggs in a shallow dish. Mix flour, cornmeal, pepper and cayenne pepper in a shallow dish.

Heat a couple tablespoons of oil in a skillet over medium heat.

Dip tomatoes in milk mixture, then flour mixture.

Fry tomatoes about 5 minutes on each side. Add more oil as necessary.

Drain on paper towels. Salt again.
