Celebrate Cinco de Mayo with mouth-watering fare

Did Cinco de Mayo sneak up on you? No problem, just create this easy taco dip and margarita. It’s fiesta time!

Taco Dip

Ingredients:
2 cans refried beans
1 pound of shredded cheddar or taco-flavored cheese
Sour cream
Salsa
Lettuce
Chopped black olives
Chopped onions
Tortilla chips

Instructions:
Spread the refried beans in a 9 x 13 microwavable dish.
Microwave according to directions.
On top of the beans, spread some sour cream.
Then spread some salsa.
On top of the salsa, sprinkle most of the shredded cheese (save a little).
Top the dish with chopped or shredded lettuce.
Sprinkle the rest of the cheese on top.
Decorate with dainty dollops of sour cream and salsa.
Add black olives and onions.

Place a bowl of tortilla chips nearby. Add a Margarita and it really comes to life…

The Essential Margarita

Ingredients:
1 ½ oz. Tequila
½ oz. Triple Sec
1 oz. Lime Juice
Salt

Instructions:
In a cocktail shaker filled with ice, combine all ingredients (except salt).
Shake. Shake. Shake.
Salt the rim of a glass by dipping the rim in a saucer of water, then into a saucer of salt.
Fill the glass with the contents of the cocktail shaker.
